2 C sugar- put in blender to make superfine
1 C butter, melted
4 tbsp pure vanilla (if you can’t handle vanilla, eliminate this)
3 C gluten free flour (I use Namaste Perfect Flour blend)
2 tsp baking powder
1 C milk
Pre-heat oven to 350 degrees. spray a bundt pan generously with canola oil spray.
Combine the sugar and butter in a large bowl and beat at medium speed until creamy. Add 1 egg at a time, mixing well in between each egg. Add vanilla (if using), blend well.
Sift the GF flour and baking powder in a bowl. Add the flour and milk alternately to the butter mixture, mixing on low speed until well blended.
Pour batter into the prepared bundt pan. The batter will be thick so smooth it out with a spatula.
Bake for 50-60 minutes or until toothpick inserted in the center comes out clean. Let it cool completely in pan.
